Ingredients

  • 1 stick (4 oz or 125 g) butter
  • 1/2 cup (4 oz or 125 g) peanut butter
  • 2/3 cup (5 oz or 150 g) granulated sugar
  • 1 cup (8 oz or 250 g) very ripe banana, mashed
  • 2 (2 oz or 60 g) whole eggs
  • 1 1/2 cups (6 oz or 185 g) all-purpose flour
  • 2 teaspoons (8 g) baking powder
  • 1/2 teaspoon (2.5 g) Kosher salt
  • 1/4 teaspoon (1.5 g) baking soda
  • 1/4 cup (2 fl oz or 60 ml) buttermilk

Directions

  • 1Grease a loaf pan or baking dish that can fit inside your air fryer.
  • 2Using an electric mixer, beat butter and peanut butter. Gradually add the sugar until light and fluffy.
  • 3Then, add one egg into peanut butter mixture continue beating until completely blended before adding the remaining egg.
  • 4Fold in mashed banana.
  • 5Preheat oven your Air Fryer to 350 F (175 C).
  • 6In a separate bowl, add the flour, baking powder, salt, and baking soda. Mix well.
  • 7Stir in flour mixture into the banana mixture alternately with buttermilk, mix until just blended.
  • 8Pour mixture into prepared loaf pan.
  • 9Bake in the preheated air fryer for 35 to 45 minutes or until a toothpick inserted into the center comes out clean.
