Ingredients
- 3 oz. (85 g) zucchini
- 3 oz. (85 g) summer squash
- 3 oz. (85 g) cauliflower
- 3 oz. (85 g) asparagus
- 3 oz. (85 g) sweet red pepper
- 2 tablespoons (30 ml) vegetable oil
- 1/2 teaspoon (1 g) ground cumin
- 1/2 teaspoon (1 g) ground coriander
- 1/4 teaspoon (1.5 g) salt
- 1/4 teaspoon (0.5 g) ground black pepper
Directions
- 1Preheat your air fryer to 380 F (190 C).
- 2In a large bowl, combine the vegetables, oil, cumin, coriander, salt, and pepper. Toss to coat well. Dump in the air fryer basket.
- 3Cook vegetables for 10 to 15 minutes, shaking the basket every after 5 minutes.
- 4Serve and enjoy.
