Ingredients
- 3 (7 oz or 200 g) zucchini
- 2 tablespoons (1 fl oz or 30 ml) olive oil
- 1 medium (3.5 oz or 100 g) red onion, chopped
- 1 teaspoon (3 g) garlic, minced
- 1 pound (450 g) lean beef, minced
- 2 (4 oz or 125 g) tomatoes, chopped
- 2 tablespoons (30 g) tomato paste
- 2 tablespoons (7 g) fresh basil, chopped
- 2/3 cup (65 g) breadcrumbs
- 1/2 cup (60 g) grated cheddar or mozzarella cheese
- salt and freshly ground black pepper
Directions
- 1Cut each zucchini in half lengthwise. Using a spoon or melon baller, scoop out the flesh in the middle of the zucchini to resemble a boat. Chop the flesh that has been removed and set aside.
- 2Heat oil in a large skillet over medium flame. Stir-fry onion and garlic for 3-4 minutes.
- 3Add the minced beef and cook for 7 minutes, stirring often until browned.
- 4Add the tomatoes, chopped zucchini, tomato paste, and basil. Cover with lid and cook for about 15 minutes, stirring once in a while. Season with salt and pepper to taste. Turn off the heat.
- 5Divide mixture equally into the zucchini boats.
- 6Combine the breadcrumbs and cheese in a small bowl. Spoon over meat.
- 7Preheat your Air Fryer to 400 F (200 C).
- 8Place the prepared zucchini boats in the Air Fryer basket. Cook for 15 minutes. Cook in batches if needed.
- 9Serve and enjoy.
