Ingredients
- 4 (7 oz. 200 g) potatoes, cut into cubes
- 2 tablespoons (1 fl oz or 30 ml) olive oil
- 1 tablespoon (6 g) cumin, ground
- 1 tablespoon (6 g) turmeric, ground
- 1 tablespoon (6 g) fennel seeds, ground
- 1/2 cup (3 oz or 85 g) onions, chopped
- 2 tablespoons (15 g) serano chile, finely chopped
- 2 teaspoons (6 g) ginger, grated
- 1 tablespoon (10 g) garlic, minced
- 1/2 pound (225 g) lean ground beef
- 1 cup (6 oz or 170 g) frozen green peas, thawed
- 1 cup (4 oz or 125 g) carrots, minced
- 1 teaspoon (6 g) sea salt
- 1/4 teaspoon (0.5 g) freshly ground black pepper
- 1 package (7 oz or 200 g) wonton wrappers, large
- 1 (2 oz. or 60 g) whole egg, beaten
- olive oil spray
Directions
- 1Cook potatoes in a pot with boiling salted water for about 20-25 minutes or until tender. Drain and set aside to cool. Then, chop the potatoes.
- 2In a skillet, cook cumin, turmeric and fennel seeds together, stirring occasionally.
- 3Add in oil, garlic, onion, serrano chile, ginger, and beef. Cook until spices are fragrant and beef turned brown.
- 4Stir in peas, potatoes, and carrots. Cook for another 3 minutes. Season with salt and pepper. Mix well. Remove from heat. Let the mixture to cool.
- 5Take a wonton wrapper. Place 2 tbsp. of the beef and potato filling. Fold into a triangle. Seal the wrapper with the beaten egg.
- 6Preheat Air Fryer to 390 F (195 C).
- 7Place samosa triangles in the cooking basket. Spray with oil. Do not overcrowd.
- 8Cook for about 10-12 minutes or until golden brown. Cook in batches.
- 9 Serve with your choice of sauce.
