Ingredients
- 1 pound (450 g) chicken breast fillet, minced
- 1 cup (8 oz or 250 g) mashed potato
- 1 (2 oz or 60 g) whole egg
- salt and pepper, to taste
- olive oil spray
- For the Breading:
- 2 (2 oz or 60 g) whole eggs, beaten
- 3/4 cup (2.7 oz or 75 g) breadcrumbs
- salt and pepper, to taste
Directions
- 1Combine chicken, mashed potato, and egg in a mixing bowl. Season with salt and pepper to taste. Spoon about 1 ½ tablespoons of mixture and form into 1-inch thick bite-sized pieces (nuggets). Place in a large platter. Set aside as you prepare the breading ingredients.
- 2In a mixing bowl, place breadcrumbs and season with salt and pepper.
- 3Place seasoned breadcrumbs and eggs in separate bowls.
- 4Coat each chicken and potato nugget with beaten eggs, and then in breadcrumbs.
- 5Preheat your Air Fryer to 390 F (195 C).
- 6Place chicken and potato nuggets in cooking basket. Spray with oil. Do not overcrowd to have an equal distribution of heat while cooking.
- 7Cook for about 15-20 minutes, or until golden brown.
- 8Serve and enjoy.
