Ingredients
- 4 (7 oz or 200 g) zucchini, sliced into wedges
- olive oil spray
- For the Breading:
- 1 cup (4.5 oz or 125 g) all-purpose flour
- 2 (2 oz or 60 g) whole eggs, beaten
- 1/2 teaspoon (2.5 g) kosher salt
- 1/4 teaspoon (0.5 g) freshly ground black pepper
- For the Marinara Sauce:
- 2 tablespoons (1 fl oz or 30 ml) olive oil
- 1 tablespoon (10 g) garlic, minced
- 1/4 cup (1.5 oz or 40 g) onion, chopped
- 1 (28 oz. or 785 g) canned crushed tomatoes
- 1/2 teaspoon (1 g) dried oregano leaves
- 1/2 teaspoon (1 g) dried parsley
- 1/2 teaspoon (1 g) sweet paprika
Directions
- 1Make the marinara sauce by heating olive oil a small sauce pan.
- 2Sauté onions and garlic until fragrant.
- 3Mix in crushed tomatoes, oregano leaves, parsley and cayenne pepper. Stir together. Add in parmesan cheese. Turn the heat to low and simmer the sauce for about 30 minutes.
- 4As the marinara sauce is being cooked. Prepare the zucchini wedges.
- 5In a mixing bowl, place all-purpose flour and season with salt and pepper.
- 6Place beaten eggs in a separate bowl.
- 7Coat zucchini wedges first in seasoned flour and then beaten eggs.
- 8Preheat your Air Fryer to 390 F (195 C).
- 9Arrange coated zucchini wedges in cooking basket without them being too crowded. Spray lightly with oil.
- 10 Cook for about 15 minutes or until golden brown.
- 11 Turn off burner and transfer marinara sauce in a serving bowl.
- 12 Serve with zucchini wedges.
