Ingredients
- 2 (7 oz or 200 g) eggplants
- Kosher salt and freshly ground black pepper
- Noodles:
- 8 ounces (250 g) soba noodles
- 1 cup (5 oz or 150 g) button mushrooms, sliced
- 2 tablespoons (1 fl oz or 30 ml) peanut oil
- 2 tablespoons (1 fl oz or 30 ml) light soy sauce
- 1 tablespoon (15 ml) rice vinegar
- 2 tablespoons (7 g) cilantro, chopped
- 2 (3 g) red chili pepper, chopped
- 1 teaspoon (5 ml) sesame oil
Directions
- 1In a mixing bowl, mix together ingredients for the marinade.
- 2Wash eggplants and then slice into ¼-inch thick cuts. Season with salt and pepper, to taste.
- 3Preheat your Air Fryer to 380 F (190 C).
- 4Place eggplants in the Air Fryer cooking basket. Cook for 10 minutes.
- 5Meanwhile, cook soba noodles according to packaging directions. Drain the noodles.
- 6In a large mixing bowl, combine the peanut oil, soy sauce, rice vinegar, cilantro, chili, and sesame oil. Mix well.
- 7Add the cooked soba noodles, mushrooms, and roasted eggplants; toss to coat.
- 8Transfer mixture in the Air Fryer cooking basket. Cook for another 5-7 minutes.
- 9Serve and enjoy.
