Ingredients
- 2 cups (500 g) ripe avocados, mashed
- 1/4 cup (60 ml) lime juice
- 1/2 cup (55 g) onion, chopped
- 1/4 cup (15 g) fresh cilantro, chopped
- 1 teaspoon (2 g) sweet paprika
- 1 teaspoon (2 g) ground cumin
- 1 teaspoon (2 g) ground coriander
- 1 teaspoon (5 g) sea salt
- 1/2 teaspoon (1 g) freshly ground black pepper
- 1/2 cup (50 g) almond flour
- 2 (2 oz or 60 g) whole eggs, beaten
- 1 cup (100 g) breadcrumbs
Directions
- 1In a large bowl, combine the mashed avocado, lime juice, onion, cilantro, paprika, cumin, coriander, salt, and pepper. Mix well.
- 2Gradually, add the almond flour until you form a batter-like mixture.
- 3Cover and place in the fridge for 2 hours.
- 4Take a spoonful of mixture and form into a ball. Repeat for remaining mixture. Arrange the avocado balls in a baking tray. Cover and freeze for 4 hours.
- 5Dip each ball in beaten eggs and then roll in breadcrumbs.
- 6Preheat your air fryer to 400 F (200 C).
- 7Place the breaded avocado ball in a single layer in your air fryer basket. Cook for 15 minutes, turning halfway through cooking time. Do not overcrowd, cook in batches if needed.
- 8Transfer to a serving dish.
- 9Serve immediately and enjoy.
