Ingredients
- 1 pound (450 g) zucchini, sliced into 3-inch length
- For the Breading:
- 2 (2 oz or 60 g) whole eggs, beaten
- 1/2 cup (1.7 oz or 50 g) breadcrumbs
- 1/2 cup (2 oz or 60 g) all-purpose flour
- 1/2 teaspoon (2.5 g) salt
- 1 teaspoon (2 g) black pepper
- olive oil spray
- For the Dip:
- 6 ounces (180 g) Greek yogurt
- 1 (3 g) clove garlic, minced
- 1 tablespoon (15 ml) lemon juice
- 2 tablespoons (7 g) fresh chives, minced
- Kosher salt and freshly ground black pepper
Directions
- 1Preheat Air Fryer to 360 F (180 C).
- 2In a mixing bowl, season all-purpose flour with salt and pepper.
- 3Place eggs and breadcrumbs in separate bowls.
- 4Coat zucchini sticks in seasoned all-purpose flour, then egg, and finally in breadcrumbs.
- 5Arrange inside the Air Fryer cooking basket. Spray lightly with oil.
- 6Set your timer to cook for 15-20 minutes or until golden brown.
- 7Prepare dip by mixing all the ingredients in a small bowl. Season with salt and pepper to taste.
- 8Serve zucchini fries with prepared dip and enjoy.
