Ingredients
- 8 oz. (250 g) fresh shrimps, deveined, shelled, and chopped
- 1 medium (2 oz or 60 g) carrot, shredded
- 2 (7 oz or 200 g) potatoes, julienned
- 2 cups (8 oz or 250 g) bean sprouts
- 1/2 cup (2 oz or 30 g) chives, chopped
- 1/2 cup (2 oz or 60 g) plain flour
- 1/2 cup (1.7 oz or 50 g) cornstarch
- 1/2 cup (4 oz or 125 ml) water
- 1 (2 oz or 60 g) whole egg, beaten
- kosher salt and freshly ground black pepper
- olive oil spray
- For the Yogurt Dip:
- 1 cup (250 g) plain yogurt
- 1 tablespoon (3.5 g) minced chives
- 1 tablespoon (3.5 g) flat-leaf parsley, chopped
- 1 (3 g) clove garlic, minced
- kosher salt and freshly ground black pepper
Directions
- 1Combine the flour, cornstarch, egg, and water. Whisk everything until the texture becomes smooth.
- 2Next, add the sprouts, potato strips, shredded carrot, chives, and shrimp into the batter. Season with salt and pepper to taste. Mix everything until thoroughly combined.
- 3Take about 1/4 cup of mixture and form into round shape. Arrange in the Air Fryer basket. Do not stack, just cook in batches if needed. Spray with oil
- 4Preheat your Air Fryer to 400 F (200 C) and cook the fritters for 15 minutes or until crisp and golden brown. Transfer to a serving platter.
- 5To make the yogurt dip: Whisk all of the ingredients together in a small bowl.
- 6Serve fritters with yogurt dip on the side and enjoy.
