Ingredients

  • 1 lb. (450 g) turkey breast fillet, ground
  • 1 cup (8 oz or 250 g) mashed potato
  • 1 (2 oz or 60 g) whole egg
  • 1 teaspoon (2 g) Italian seasoning
  • salt and pepper, to taste
  • olive oil spray
  • For the Breading:
  • 2 (2 oz or 60 g) whole eggs, beaten
  • 3/4 cup (2.7 or 75 g) breadcrumbs
  • salt and pepper, to taste

Directions

  • 1Mix together the ground turkey, mashed potato, egg, and Italian seasoning in a large mixing bowl. Season with salt and pepper to taste. Spoon about 1 ½ tablespoons of mixture and form into 1-inch thick bite-sized pieces (nuggets). Place in a large plate. Set aside.
  • 2In a mixing bowl, place breadcrumbs and season with salt and pepper.
  • 3Place seasoned breadcrumbs and eggs in two separate bowls.
  • 4Coat each turkey and potato nugget with beaten eggs, and then in breadcrumbs.
  • 5Preheat your Air Fryer to 390 F (195 C).
  • 6Place chicken and potato nuggets in your air fryer cooking basket. Spray with oil. Do not overcrowd to have an equal distribution of heat while cooking.
  • 7Cook in the air fryer for about 15-20 minutes, or until golden brown and cooked through.
  • 8Serve and enjoy.
