Ingredients

  • 4 (7 oz or 200 g) potatoes, washed, peeled and cubed
  • 1 cup (5 oz or 150 g) canned tuna in water, drained
  • 1 (2 oz or 60 g) whole egg
  • 2 tablespoons (15 g) finely grated parmesan cheese
  • 2 tablespoons (15 g) all-purpose flour
  • 2 tablespoons (7 g) fresh chives, finely chopped
  • 1/2 teaspoon (2.5 g) kosher salt
  • 1/4 teaspoon (0.5 g) black pepper
  • olive oil spray
  • For the Breading:
  • 1 cup (4 oz or 125 g) all-purpose flour
  • 2 (2 oz or 60 g) whole eggs, beaten
  • 1 cup (3.5 oz or 100 g) Panko breadcrumbs

Directions

  • 1To start making the potato croquettes, boil the cubed potatoes in boiling water with a pinch of salt until fork tender. Then, drain in your colander and transfer to a bowl; mash using a fork. Set aside to cool.
  • 2Add the tuna, egg, parmesan cheese, flour, and chives in the bowl with mashed potatoes. Mix well. Season with salt and pepper.
  • 3Scoop about 2 tbsp. of the potato mixture and shape into small logs. Set aside.
  • 4Prepare the breading by placing the all-purpose flour, eggs, and breadcrumbs in 3 separate bowls.
  • 5Coat the potato logs with flour, then eggs, and lastly breadcrumbs. Spray lightly with oil.
  • 6Preheat your Air Fryer to 390 F (195 C).
  • 7Arrange the potato croquettes in the Air Fryer cooking basket evenly, but not too crowded.
  • 8Cook for 10-15 minutes or until golden brown.
  • 9Serve with your favorite dipping sauce.
