Ingredients

  • 6 (7 oz or 200 g) zucchini
  • 1 pound (450 g) ground lean beef
  • 1 tablespoon (15 ml) olive oil
  • 1 medium (3.5 oz or 100 g) onion, chopped
  • 2 (3 g) cloves garlic, minced
  • 1 cup (8 oz or 250 g) marinara sauce
  • 1 teaspoon (2 g) Italian seasoning
  • 1/2 teaspoon (2.5 g) Kosher salt
  • 1/4 teaspoon (1 g) freshly ground black pepper
  • 4 ounces (125 g) mozzarella cheese, grated

Directions

  • 1Preheat your air fryer to 380 F (190 C).
  • 2Cut the zucchinis in half lengthwise, and scoop the meat with a spoon. Chop and set it aside.
  • 3Place the prepared zucchini boats on a baking sheet lined with parchment paper or lightly greased with oil.
  • 4Heat olive oil in a non-stick pan over medium-high heat. Stir-fry onion and garlic for 3 minutes.
  • 5Add the meat and cook until browned, about 5 minutes.
  • 6Stir in the marinara sauce, chopped zucchini meat, and Italian seasoning. Season with salt and pepper to taste. Cook for 10 minutes.
  • 7Spoon mixture into prepared zucchini boats and top each with some mozzarella cheese.
  • 8Cook in the air fryer for 15-20 minutes or until cheese is melted and bubbly.
  • 9Serve and enjoy.
