- 4 (7 oz or 200 g) sweet potatoes, peeled and diced
- 1 cup (5 oz or 150 g) button mushrooms, sliced
- 1/2 cup (3 oz or 80 g) onion, chopped
- 1/2 cup (1.5 oz or 45 g) green bell pepper, chopped
- 2 tablespoons (1 fl oz or 30 ml) lemon juice
- 2 tablespoons (1 fl oz or 30 ml) olive oil
- 1/2 teaspoon (1 g) dried thyme
- 1/2 teaspoon (1 g) dried rosemary
- salt and pepper, to taste
- 1Preheat Air Fryer to 360 F (180 C).
- 2In a mixing bowl, mix together all ingredients. Season with salt and pepper.
- 3Transfer potato mixture into a casserole dish that can fit into the size of the Air Fryer cooking basket.
- 4Cook for about 25-30 minutes.
- 5Serve and enjoy.
