Ingredients
- 4 (7 oz or 200 g) potatoes, washed, peeled and cubed
- 1 cup (5 oz or 150 g) cooked chicken, shredded
- 4 oz. (4 oz or 125 g) chicken ham, chopped
- 1 (2 oz or 60 g) whole egg
- 2 tablespoons (7 g) all-purpose flour
- 1/2 teaspoon (1 g) dried rosemary
- 1/2 teaspoon (1 g) ground coriander
- 1/4 teaspoon (1.5 g) kosher salt
- 1/4 teaspoon (0.5 g) black pepper
- olive oil spray
- For the Breading:
- 1 cup (4 oz or 125 g) all-purpose flour
- 2 (2 oz or 60 g) whole eggs, beaten
- 1 cup (3.5 oz or 100 g) Panko breadcrumbs
Directions
- 1Cook the potatoes in boiling water with a pinch of salt until fork tender. Then, drain potatoes in your colander and transfer to a bowl; mash using a fork. Set aside to cool.
- 2Add the chicken, chicken ham, egg, flour, rosemary, and coriander in the bowl with mashed potatoes. Mix well. Season with salt and pepper.
- 3Scoop about 2 tablespoons of the potato mixture and form into small logs. Set aside.
- 4Prepare the breading by placing the flour, eggs, and breadcrumbs in individual bowls.
- 5Coat the potato mixture with flour, then dip in egg, and lastly roll in breadcrumbs. Spray lightly with oil.
- 6Preheat your Air Fryer to 400 F (200 C).
- 7Arrange the croquettes in the Air Fryer cooking basket evenly, but do not overcrowd.
- 8Cook the croquettes for 10 to 15 minutes or until golden brown.
- 9Serve with your favorite dipping sauce.
