Ingredients

  • 2 medium eggplant (about 16 oz or 450 g)
  • 1 cup (3.5 oz or 100 g) bread crumbs
  • 1/4 cup (30 g) Parmesan cheese, finely grated
  • 1 teaspoon (2 g) Italian seasoning
  • 1 teaspoon (5 g) Kosher salt
  • 1/2 teaspoon (1 g) dried basil
  • 1/2 teaspoon (1 g) garlic powder
  • 1/2 teaspoon (1 g) onion powder
  • 1/2 teaspoon (1 g) freshly ground black pepper
  • 1/4 cup (30 g) all-purpose flour
  • 2 (2 oz. or 60 g) whole eggs
  • cooking oil spray

Directions

  • 1Slice eggplant into 3-inch sticks. Pat dry with paper towel.
  • 2Combine breadcrumbs, cheese, herbs, and seasonings in a shallow bowl.
  • 3In another shallow bowl, add the flour.
  • 4Whisk eggs in a small bowl.
  • 5Dip eggplant sticks in flour, then in beaten eggs, and finally roll in breadcrumb mixture. Place the breaded eggplant sticks on a plate and let sit for 5 minutes.
  • 6Preheat your air fryer to 380 F (190 C).
  • 7Arrange the eggplant sticks in the air fryer basket in a single layer, cook in batches if needed. Spray with oil.
  • 8Cook for 8 to 10 minutes. Shake basket and cook further 5 minutes.
  • 9Serve with your favorite dipping sauce.
