Ingredients
- 2 medium eggplant (about 16 oz or 450 g)
- 1 cup (3.5 oz or 100 g) bread crumbs
- 1/4 cup (30 g) Parmesan cheese, finely grated
- 1 teaspoon (2 g) Italian seasoning
- 1 teaspoon (5 g) Kosher salt
- 1/2 teaspoon (1 g) dried basil
- 1/2 teaspoon (1 g) garlic powder
- 1/2 teaspoon (1 g) onion powder
- 1/2 teaspoon (1 g) freshly ground black pepper
- 1/4 cup (30 g) all-purpose flour
- 2 (2 oz. or 60 g) whole eggs
- cooking oil spray
Directions
- 1Slice eggplant into 3-inch sticks. Pat dry with paper towel.
- 2Combine breadcrumbs, cheese, herbs, and seasonings in a shallow bowl.
- 3In another shallow bowl, add the flour.
- 4Whisk eggs in a small bowl.
- 5Dip eggplant sticks in flour, then in beaten eggs, and finally roll in breadcrumb mixture. Place the breaded eggplant sticks on a plate and let sit for 5 minutes.
- 6Preheat your air fryer to 380 F (190 C).
- 7Arrange the eggplant sticks in the air fryer basket in a single layer, cook in batches if needed. Spray with oil.
- 8Cook for 8 to 10 minutes. Shake basket and cook further 5 minutes.
- 9Serve with your favorite dipping sauce.
