Ingredients

  • 2 cups (12 oz or 340 g) quinoa, cooked
  • 1 cup (1 oz or 30 g) spinach, chopped
  • 1 (2 oz or 60 g) large egg
  • 2 tablespoons (7 g) parsley, minced
  • 1 teaspoon (3 g) garlic, minced
  • 1/2 cup (2 oz or 60 g) carrot, peeled and shredded
  • 1/2 cup (3 oz or 85 g) onion, chopped
  • 1/4 cup (2 fl oz or 60 ml) skim milk
  • 1/4 cup (15 g) grated parmesan cheese
  • 1 cup (3.5 oz or 100 g) breadcrumbs
  • sea salt and freshly ground black pepper

Directions

  • 1In a large mixing bowl, combine together all the ingredients. Season with salt and pepper to taste.
  • 2Preheat your Air Fryer to 380 F (190 C).
  • 3Scoop ¼ cup of quinoa and spinach mixture and place in Air Fryer cooking basket. Cook in batches for about 10 minutes or until golden brown.
  • 4Serve and enjoy.
