Ingredients

  • For Potatoes:
  • 4 (7 oz or 200 g) medium new potatoes
  • 8 cups (70 fl oz or 2 L) cold water
  • 1 teaspoon (2 g) ground cumin
  • 1 teaspoon (2 g) smoked paprika
  • 1 bay leaf
  • salt to taste
  • olive oil spray
  • For Sauce:
  • 1 (3 g) clove garlic
  • 1/2 cup (2 oz or 60 g) mayonnaise
  • 1 tablespoon (15 g) tomato sauce
  • 1 tablespoon (15 ml) sherry vinegar
  • 1/2 teaspoon (1 g) dried mint
  • 1/2 teaspoon (1 g) hot paprika
  • salt and pepper, to taste
  • For Spice Blend:
  • 1 teaspoon (2 g) adobo seasoning
  • 1 teaspoon (2 g) herbs de Provence

Directions

  • 1Place all the ingredients for the sauce in a blender or food processor until smooth. Transfer into a small bowl and cover with plastic wrap. Place in refrigerator until ready to use.
  • 2In a separate bowl, mix the spices well and set aside.
  • 3Cut the potatoes into 1-inch cubes.
  • 4Boil the water and add potatoes, cumin, paprika, and bay leaf. Season to taste with salt. Cover with lid and cook on high for 10 minutes.
  • 5Turn off the heat, drain and discard the water.
  • 6Transfer potatoes into the Air Fryer basket. Set it to 400 F (200 C) and cook for 15 minutes or until golden brown.
  • 7Place in a bowl, sprinkle with spices and toss to coat.
  • 8Transfer into a serving dish and pour the prepared sauce over it.
