Ingredients
- 8 (5 oz or 150 g) chicken drumsticks
- 1/4 cup (2 fl oz or 60 ml) olive oil
- 1/4 cup (2 fl oz or 60 ml) fresh lime juice
- 2 tablespoons (1 fl oz or 30 ml) soy sauce
- 2 (1.7 oz or 40 g) shallots (quartered)
- 4 (3 g) cloves garlic
- 3 Scotch bonnet or habanero chili (stemmed and seeded)
- 1 tablespoon (15 g) brown sugar
- 1 tablespoon (2.5 g) fresh thyme leaves
- 1/2 teaspoon (1 g) nutmeg (freshly grated)
- 1/2 teaspoon (1 g) allspice (ground)
- 1/2 teaspoon (1 g) cinnamon (ground)
- 1/4 teaspoon (1.5 g) salt
- 1/4 teaspoon black pepper (ground)
Directions
- 1Whisk together the olive oil, lime juice, soy sauce, shallots, garlic, chili, brown sugar, and thyme in a food processor. Process until smooth.
- 2Add the nutmeg, all spice cinnamon, salt and pepper. Pulse 2-3 times. Transfer mixture into a medium non-reactive bowl.
- 3Add chicken drumsticks and toss to coat. Cover and refrigerate for 2 hours.
- 4Preheat your Air Fryer to 400 F (200 C).
- 5Place chicken into the Air Fryer basket. Cook for 8-10 minutes on each side.
- 6Place in a serving dish.
- 7Serve and enjoy.
